A dish that would entice the toughest vegetable-hater, the Cauliflower with White Chocolate Sauce has a beautiful blend of sweet and savory flavors. The white creamy sauce is made from White Chocolate and it carries an indelible sweetness but beautifully balanced with other savory elements, topped with Lumpfish Caviar and Ikura for the seafood Umami. The Cauliflower Steak is also charred with delightful burnt aroma while maintaining its juicy crunch. Truly an exquisite flavor-combo but it surely works. A safer option- the Grand Marnier Prawns are cooked by flambéing the French liqueur and cooking them with French Butter. The flavor-combo is pretty straight-forward but the crustaceans are sweet and very fresh.
The highlight and the restaurant's signature dish- the Foie Gras Claypot Rice with Serrano Ham raises one eyebrow. The classic local delight- Claypot Rice has got an upgrade by introducing Foie Gras and Serrano Ham into the dish. There are also some other details such as cutting bits of Foie Gras while cooking the Jasmine Rice, serving Fried Pork Lard (using trimmed fats of Serrano Ham) to further enhance the aroma as well as offering Balsamic Reduction as sauce to cut through the greasiness and offer a sleek sweetness to the dish. The aroma and flavor-combo are out of the world, any Foie Gras lovers would be able to resonate with this. After a heavy, greasy Claypot Rice... end the meal with the Deconstructed Apple Tart with Apple Sorbet. It has the much sought after acidity and refreshing touch.
