It is also the de facto go-to place and iconic spot for a refined, classic Cantonese meal in Penang. The restaurant prides itself in using premium and only the freshest ingredients. If you do enjoy a good, flavorful Chicken Rice, check out Maple Palace's. Cooked using carefully chosen premium grade 7-month corn-fed Chicken; the Chicken is steamed instead of boiled. By steaming the Chicken, it retains the same taste as boiling but ensure better consistency. But you also get the rich, clean-tasting Chicken essence after steaming, it will be seasoned and served. The Steamed Superior Chicken is first marinated for 5 hours and expertly cooked to perfection with tender, lean, luscious meat. A generous amount of specially made Chili sauce, Ginger paste and Dark Soy sauce will also be served. Maple Palace's Steamed Superior Chicken requires one-day pre order due to the tedious preparation. The Chicken Rice is served separately at RM5 per pax. The Chicken Rice is cooked using Chicken broth with a generous amount of Ginger so expect it to be really fragrant and packed with flavors. Probably the most expensive Chicken Rice in Penang but expect superior quality and consistency. 

To add on to the Chicken Rice feast, try their Sichuan Fish Fillet with Pickled Mustard (酸菜鱼). Unlike Sichuan Boiled Fish (水煮鱼), the real draw here is the Pickled Mustard, it should carry the acidity with a hint of spiciness and numbness from the Sichuan Peppers. The Fish should be silky smooth with a delicate bite, not overly soft. Maple Palace's rendition has all columns ticked- fresh and firm fish (they are using Grouper) with good acidity and a hint of spiciness. The broth is beautifully cooked either (base broth is Fish broth), the whole concoction feels comforting and dangerously addictive. To complete your Sichuan experience, add on the Stir Fried Shredded Cabbage with Pork Belly and Vinegar. The Cabbage is shredded and not cut... for a better, crunchy bite. It is skillfully cooked with the right crisp; the soul of the dish- that dash of Vinegar for the acidic tinge and aroma. This dish packs a heavy but good Chili punch too.
