Uncle Kin Chili Pan Mee @ Raja Uda, Butterworth, Penang.

Those who frequently patronize the food courts at shopping malls (namely Queensbay Mall and Gurney Paragon Mall) should be familiar to the name- Uncle Kin Chili Pan Mee. Uncle Kin is a well-established Penang brand, for the case of Chili Pan Mee. It started with a humble beginning by having a few hawker stalls scattered around the island but has since moved its operations into food courts. Penangites have professed their love for Chili Pan Mee and their businesses have quickly expanded to Raja Uda, Butterworth. The entire shop is dedicated to Chili Pan Mee. Business was brisk on our visit, the shop was almost fully occupied even at odd hours (3:30 pm). The fully air-conditioned place takes on self-service approach- customers are to place their orders at the counter and to collect their orders at the collection counter (according to order number). While we do agree their Pan Mee is decent but we'd like to see more variety... more side dishes would be great.

Chili Pan Mee Soup (Rm 6.90)

We had both Dry and Soup versions but found their Dry version especially try-worthy. The home-made noodles were carefully cooked to the right texture and evenly coated with Chili-infused sauce and topped with various condiments such as Deep Fried Anchovies, Minced Meat, Deep Fried Shallots and a Soft-Boiled Egg. Diners can scoop as much Chili Flakes as they like at the collection counter; the spicy lovers would be glad to know that the Chili Flakes impart a smoky yet burning sensation to the tongue (though not extremely spicy; more of a gentle heat). The portion was alright but those with bigger appetite would find it a little unsatisfying.

The Soup version paled in comparison with the Dry version but it was still decent. The broth carried a heavy Anchovy flavor with a sleek sweetness towards the end. The broth was made delicious by blending in the runny yolk; the dish was most comforting and suitable to eaten on a regular basis.
